This piquant red cabbage dish is always better if made the day before. It is popular in Denmark on Boxing Day. We like it as a side dish with a slow roast belly of pork.

Pork pies are much easier to make than you might imagine. Just a little time needed to prepare the filling and the pastry and some patience required with the crimping and sealing of the pies.

This recipe is inspired by Nigella and an old Frances Bissell recipe. I have based it on my own traditional Christmas mincemeat recipe which I make every October, the recipe being handed down through my family. The ratio of quinces versus the usual cooking apples is greater in this adaption and so the storing time may be reduced. I keep my quincemeat in the fridge but a cool larder would do. I have a test jar in my pantry so will report back at some stage on its' keeping quality. This recipe will make about 4 kg and is best made in a mincer if you have one. If not a food processor will do, but go steady and don't over process or you will have pulpmeat.
